Beet Almond Dip Recipe

I'm inwards the midst of creating 101 recipes for a new cookbook (it was announced March 3rd). As a result, I haven't been cooking anything other than recipes for the book. But Passover is coming upward too I've been asked to convey appetizers to the seder dinner. Appetizers for Passover are a fight tricky. If the repast is meat, which is typical, hence y'all can't purpose whatever dairy. In add-on y'all can't purpose legumes, seeds too most grains. So that way things similar hummus too baba ghahoush are out hence are cheeses too dairy based dips. What's left? Vegetables too nuts. Also eggs too meat (chopped liver is typical).

Recently I received about samples of Melissa's Organic Baby Beets, peeled too steamed too laid to eat. These cooked beets are non bad for salads only I decided to seek purpose them to brand a dip. Instead of tahini, I used blanched almonds. Beets too almonds are actually overnice together. But they are both sweet, hence I added ginger too lemon to cutting the sweetness. It besides needs enough of salt.

You tin serve this dip alongside chips or fresh vegetables. It's creamy too smoothen too fifty-fifty though I felt similar I was cheating on my Vitamix, I did exam it inwards my ancient Cuisinart nutrient processor too got non bad results. Beet Almond Dip 

Ingredients

1/4 loving cup blanched almonds
two Tablespoons water
i loving cup sliced cooked beets
i Tablespoon freshly squeezed lemon juice
i Tablespoon extra virgin olive oil
1/8 teaspoon dry reason ginger
Salt

Instructions

Process the almonds too H2O inwards the nutrient processor for a infinitesimal or so, until white too creamy only non completely smooth. Add the beets too process, scraping downwards the sides from fourth dimension to time. Finally add together the lemon juice too olive fossil oil too ginger. Season to gustation alongside salt.
